
One of our favorite dishes is chicken curry over rice. This dish is especially good during a cold because the curry powder totally opens up your sinuses plus the turmeric that’s in the curry powder has amazing health benefits.

While your onions are starting to cook down dice up 6 cloves of pickled garlic. If you can’t get pickled garlic, you can also use fresh garlic or the pre diced garlic from your local grocery store. The measurement comes to about a 1/2 cup diced garlic. Add your garlic to the onions and turn your ninja up to high sauté.
In Instant pot add 4 cups brown rice, 5 cups water, 2 Tbsp butter and 1/2 tsp salt. Set on high pressure for 22 minutes. This step can be done at the start too, I just happened to choose to do it after getting my onions and garlic started. Cube up a package of boneless skinless chicken thighs and add in spices. Spices include 2 tsp pepper, 2tbsp chili powder, and 4 tbsp Curry Powder. Add chicken and spices into the ninja with the onions and garlic and turn to med high sauté.
Cook for 20 minutes stirring occasionally as to not let the chicken burn.
Turn heat to low med and add half stick of butter and another 2 tbsp of curry powder. Give a good stir to mix everything.
At this point your rice should be done so tend to that by doing a quick release of the pressure.
Turn the sauté function off for your ninja and lower the lid. Set the air crisp setting to 390 degrees for 10 minutes. You can stir and repeat this step to suit how crisp you like the tops of your chicken.
Now that your quick release is done for your rice grab a fork and fluff your rice. You can keep the lid on until you’re ready to plate.
Once your chicken is at the right amount of crispy and juicy it’s time to plate up! Grab a bowl and add your rice then layer on your curried chicken! Like your curry a little saucy? Try adding a cup of chicken stock or water during your last air crisp.
